Soft and chewy with bursts of chocolate chunks! You can substitute the almond butter for any other nut butter you like. I used Justins Classic Almond Butter and honey to sweeten them. If you choose to use sugar instead of the honey substitute 2/3 cup sugar.
Preheat oven to 350F and line a large baking sheet with parchment paper Place all ingredients except chocolate chunks in a medium bowl and beat until smooth Add the chocolate chunks and mix gently Drop teaspoonfuls of mixture on baking sheet, or you can take teaspoonfuls amounts of the mixture in your wet hands and form them into balls Wet the back of a spoon and gently flatten the cookie ball Bake for 9-11 mins Cool and dig in ! If you want to make a larger quantity just double the recipe
