These cookies are SUPER EASY to make. A blend of nuts, coconut, and chocolate chips, these are sure to please. These mounds of joy are low carb, gluten-free, and keto friendly. I found this recipe on https://www.delish.com/
These cookies come out chewy and delicious. Very hardy as well, I love mine with a cup of coffee or tea
Magic Keto Cookies
Ingredients
- 1/4 cup coconut oil Solid(do not melt)
- 4 Tbsp unsalted butter, softened
- 3 Tbsp Sweetener I used Swerve
- 1 cup sugar free chocolate chips I used Lily's
- 1 cup coconut flakes Unsweetened
- 1/2 cup pecans chopped
- 1/2 cup walnuts chopped
- 1 tsp vanilla extract
- 4 egg yolks
- sea salt flakes for sprinkling on top (optional)
Instructions
- Preheat oven to 350F, and line a large baking sheet with parchment paper
- In a large bowl stir coconut oil, butter, sweetener, vanilla extract,and egg yolks. Mix in chocolate chips, coconut, and nuts.
- I used a cookie scoop and got 25 cookies, or you can use a spoon to drop even amounts of dough onto baking sheet. Sprinkle with the sea salt if desired
- Bake 12-14 minutes until light golden brown

These are awesome. Easy to make and so good. Of course I did not have unsweetened chocolate chips or unsweetened coconut so my cookies had the sugar in them. I only made half a batch. But they are so yummy. A definite on our dessert plan. Next time I want to try them without the sugary items. Thank you for a wonderful dessert.

Hi Lauren, The cookies might fall apart if you don’t use the coconut. I haven’t tried subing it with a different ingredient.

These are AMAZING!!! The reviews are correct in that they cook out a lot of oil but do not fear! Once I moved them to new parchment paper on the cooling rack, they were perfect. Think Girl Scout Samoas but tastier and minus the guilt. Thank you for this heavenly recipe!

Hi Katie, I don’t see why you couldn’t make the batter ahead of time. It might Harden in the fridge and would be harder to scoop, so maybe take the batter out about 30 mins before baking.

I made these with stevia in the raw.. Bad aftertaste at first out of oven then put them in frig and seemed ok..made them a 2nd time.. With swerve brown sweetener and added sunflower seeds pure vanilla… Way yummier lol…and I ate 4 cookies at work.. Still lost 1.8 pounds..
Stevia is alot sweeter than erythritol or xylitol so you wouldnt be able to use them in same measurement. Glad they came out second time😁

LOVE these….. only thing I would do differently is double the amount of coconut flakes to make them a bit more dense. Otherwise almost perfect as recipe follows.

These are amazing! Love the subtly sweet flavor. My two cents: ABSOLUTELY DO NOT SKIP THE SEA SALT ON TOP! It takes these to a new level! So delicious. Oh, and don’t fret about the amount of oil that comes out; walk away for 15 minutes (if you can!) and come back. All will be yummy in your world!

Made these this morning….. was a bit concerned with the amount of fat that came out when taking them out of the oven but after reading a few other post telling me to just let them cool, I must say they came out Perfect. !! Have these in the oven. The ‘batter’ tasted good, but was runny with chunks of nuts & coconut. Didn’t melt the butter or coconut oil beforehand, but they ran all over the pan when scooping them out. Anyone else have an issue with this?
Hi Jules, the batter should be the consistency of chunky cookie batter, not runny at all. Did you add just the egg yolks in and not the whole egg?

Can I use liquid stevia in place of Swerve?
Hi Wendy, you can start with 1/2 tsp liquid stevia and adjust from there, liquid stevia is much sweeter than swerve

These are addictive! 11 minutes at 350 was perfect, 12 was a too much for my coconut. I got 26 cookies. Half made with Maldon salt crystals. I highly say YES to the tiny added amount of salt – divine.

Yes 4 yoke.. they definitely were not ok even after cool lol. They basically were just a pool of chocolate… did you measure the coconut oil before melted or after melted? I would love to give these another shot I just have no idea what went wrong
You dont melt the coconut oil, you use it solid, I think thats why yours melted. Scoop the solid coconut oil into measuring cup and add to the ingredients, the dough should be thick like a regular cookie dough
I used the coconut oil SOLID, right from the jar & 4 yolks as stated. Mine were a pool of melted mess. But Good with a spoon. i’d like to try them again to.. But what do you suggest?

YES! I followed the recipe EXACTLY.. Mine just melted all over the parchment paper. They ARE good, but I’m eating them with a spoon.
Mickey, try rolling them into a ball after you scoop them, see if that helps a bit w the falling apart
Just made these, was a little worried about the oil coming from the cookies if they stayed together. They came out find and tasted great if you are looking for a sweeter cookies add one more Tbsp of swerve.

That might make the dough too dry, I think there will be some oil no matter what since it has coconut oil in the recipe and it melts in the oven and seeps out. Once they cool the coconut oil kinda gets reabsorbed into the cookies

Cindi, just to share that if you can’t find Lily’s chocolate chips I’ve switched to Hershey’s sugar free chocolate chips. They are a regular size chocolate chip, taste great and are $3.25 per bag at Walmart.
Haven’t made these cookies yet but they are definitely on my list for this week.

Hi Vanessa, the app you’re using might be counting sugar alcohols as carbs like many apps do. I use carb manager and it’s 3 net carbs.
The recipe says 24 servings and your breakdown says based on 18. Perhaps that is part of the difference? Plus, different calculators can have different values for the same item.
