Hot Cocoa Muffins

WARNING!!!Do not attempt these if you dislike the warm and chocolatey smell of hot cocoa throughout your house! Just a fair warning, but let me tell you they really are worth making.  Kids and adults alike will love them, just try not to burn your mouth  eating them hot out of the oven ( it’ll be hard waiting for them to cool.)

Hot Cocoa Muffins

Print Recipe
Serves: 12 Cooking Time: 14-16 minutes

Ingredients

  • 2 cups all-purpose flour
  • 1 Tbsp. baking powder
  • 2 large eggs
  • 1 1/2 cup whole milk
  • 1 cup granulated sugar
  • 8 Tbsp melted butter or 1 cup canola oil
  • 1 tsp vanilla extract
  • 1/4 cup hot cocoa mix ( I used Starbucks double chocolate)
  • 1/4 cup unsweetened cocoa
  • 1/2 cup chocolate chunks/chips

Instructions

Preheat oven to 400F, line or grease muffin tin

In a large bowl whisk the flour, baking powder, hot cocoa mix, and unsweetened cocoa

In a medium bowl whisk the eggs, sugar, milk, butter or veg. oil, and vanilla extract

Pour wet ingredients over dry and mix gently until moistened

Fold in chocolate chips/chunks

Fill muffin tins 3/4 full ( I used ice cream scoop)

Bake 14-16 minutes

Thai Green Curry Soup

This is the prefect soup to warm you up, fragrant with curry, ginger, and garlic.  Make a pot and keep on hand for the winter.

Thai Green Curry Soup

Print Recipe
Serves: 4 Cooking Time: 20 minutes

Ingredients

  • 1 Tbsp grated ginger
  • 2 Tbsp canola oil
  • 2 tsp minced garlic
  • 1 tbsp grated lemongrass
  • 2 Tbsp green curry paste
  • 1 Lb chicken breast cut into bite seized pieces
  • 2 1/2 cups chicken stock
  • 1 can reduced fat coconut milk
  • 2 Tbsp fresh lime juice
  • 1/2 cup fresh snow peas
  • 3 oz uncooked rice noodles
  • cilantro springs and lemon wedges for serving

Instructions

In dutch oven or 5 QT pot heat canola oil

Stir in garlic, ginger, and lemongrass, cook 1 minute

Add the curry paste and cook another minute until fragrant

Add in the chicken breast, cook about 3 minutes until just slightly pink

Pour in the chicken stock and coconut milk ( you can add in some cilantro springs as well if you like). Bring mixture to a simmer and cook for 10 minutes.

Taste the broth and adjust your seasoning ( ginger, salt,curry paste, etc...)

Stir in the snow peas and noodles, cook for 3 minutes

Top with cilantro springs and serve with lemon wedges
