These cookies come out chewy and delicious. Very hardy as well, I love mine with a cup of coffee or tea
Magic Keto Cookies
Ingredients
- 1/4 cup coconut oil Solid(do not melt)
- 4 Tbsp unsalted butter, softened
- 3 Tbsp Sweetener I used Swerve
- 1 cup sugar free chocolate chips I used Lily's
- 1 cup coconut flakes Unsweetened
- 1/2 cup pecans chopped
- 1/2 cup walnuts chopped
- 1 tsp vanilla extract
- 4 egg yolks
- sea salt flakes for sprinkling on top (optional)
Instructions
- Preheat oven to 350F, and line a large baking sheet with parchment paper
- In a large bowl stir coconut oil, butter, sweetener, vanilla extract,and egg yolks. Mix in chocolate chips, coconut, and nuts.
- I used a cookie scoop and got 25 cookies, or you can use a spoon to drop even amounts of dough onto baking sheet. Sprinkle with the sea salt if desired
- Bake 12-14 minutes until light golden brown

Way to much egg. I doubled the recipe, but only used 4 eggs. It wasn’t good. Nice cookies but i recommend using 1-2 eggs

Love these! I used Monk Fruit sweetner so they weren’t sweet at all. I think the next time if I add 3 or 4 dried apricots to the pecans when I chop them in the food processor the cookies will be a bit sweeter. This is a repeat!

They look yummy, but only nuts i can eat are cashews, peanuts, and almonds. Allergic to walnuts and pecans.

Hi Sarah, you can try adding you’re favorite seeds instead or more coconut, if you omit the nuts or seeds alltogether the mixture might not hold up when you bake

Just tried them with the sugar free chocolate chips. Not as good. Very bitter. I can’t have Inulin and Lilly’s chocolate chips have that in them.
I didn’t half the swerve and they were great. Just mad another batch used 1/2 c unsweetened chocolate chips and 2 tbsp swerve. Haven’t tried them yet but I think they will be great. The chocolate chips are the organic Camino sugar free. Thanks for the great snack b

Oh my word I made these again the other night, they are my go to cookie and I don’t know what I was thinking but I used 4 egg whites and not the 4 egg yokes and I have to say…they turned out perfect! actually I think I like them better! And I never use the coconut oil, I only use the butter and they come out perfect! so from now on…I’ll probably just use the egg whites…
I also added about a Tbsp. of almond flour to help absorb the oil . I also used a mini muffin pan that held a small scoop of the dough perfectly. The oil was absorbed very quickly during the cooling.

I made these cookies tonight. Love them. I put the batter in the fridge to firm up before baking and it made them more shapely.
This has been my go-to cookie recipe for almost a year now. People have no idea these are keto and request them at potlucks all the time! My kids and husband love them. Its just perfect and so easy! I was a little overwhelmed at first because the ingredients can get pricey. Buy in bulk. Its cheaper and you will definitely want to make this recipe more than once!

I made these again tonight but tweaked it a little, I chopped up my nuts and even the coconut to be a little smaller pieces and I cut down the coconut oil to 1 T. with all the other ingredients, I also form mine into a ball and they cooked perfectly without the oily melting, plus with everything ground in them, they melt in your mouth!! they are our all time favorite!

When I import this recipe into the Carb Manager app, it shows to have more carbs per serving than above. They are very good though.

These are delish! I added the 1 Tbs of coconut flour. I baked mine in an 8×8 pan lined with foil for easy removal for about 18 minutes. I let them set for almost 30 minutes before cutting.

Total fail. Took out the cookie tray from the oven. Still have scooped cookie shapes but tons of chocolate liquid they are swimming in. I even added the tbsp of coconut flour TG I didn’t invest a lot of time in this

Just made my first batch. Very good, but they did flatten out a lot while baking. I think I’ll try the suggestion to add a TBS of coconut flour the next time, also will chill mixture before baking.

Pressed them into a 12×9 parchment lined pan and baked about 17 minutes. I was worried when they 1st came out because they looked greasy. They are delicious! It made 24 squares.

Made these just now! Read all the comments. I used Swerve confectioners sugar, add 1 Tablespoon of coconut flour, used coconut flakes and cooked them in a metal mini cupcake tin. Let them cook in the tin 12 minutes and let them cool for 15 minutes in the tin and they are now on a rack cooling. Tasty! Thanks for the recipe!
